A juicy twist on the classic with all the drama of a sour.

The Negroni Sour is back in rotation, but this time, we’re giving it a deep, stone-fruity twist. The Plum Negroni Sour combines everything we love about a traditional Negroni (bittersweet, bold, and a little mysterious) with a tangy plum syrup and silky egg white for the kind of cocktail that gets remembered.

We’re leaning into rich end-of-summer flavors with a homemade plum syrup and a plum-infused gin that is easier to make than it sounds. If you’re already a Negroni lover (or Negroni-curious), this twist is your next must-shake.

Why You’ll Love This

  • Plum syrup adds deep, caramelized stone fruit notes with brown sugar richness.
  • Plum-infused gin dials up the fruit while still keeping the structure of the base spirit.
  • Egg white gives it that gorgeous frothy finish that makes it feel like a proper bar cocktail.
  • It’s a sour — meaning it’s tart, balanced, and made to impress.

Servings 1 Cocktail
Ingredients
  • 1 oz plum-infused gin see below
  • 1 oz Campari
  • 1 oz sweet vermouth
  • ½ oz plum syrup see below
  • ¾ oz fresh lemon juice
  • 1 egg white
  • Garnish: dehydrated citrus edible flower, or plum slice
Instructions
  • Add all ingredients to a cocktail shaker and dry shake (no ice) to emulsify the egg white.
  • Add ice and shake again until well chilled.
  • Double strain into a coupe glass.
  • Garnish and serve!

Plum Syrup (Lazy Girl Hack-Approved):

  1. Start with brown sugar simple syrup (equal parts brown sugar and water, simmered until dissolved).
  2. Add chopped fresh plums to the syrup and cook on low heat until it thickens slightly and the fruit breaks down.
  3. Remove from heat, stir in ¼ cup water, strain, and chill.

Plum-Infused Gin:

  • To a jar, add 1 cup chopped plums and 1.5 cups gin (just enough to cover).
  • Seal and store in a cool, dark place for 5–7 days.
  • Shake the jar gently each day.
  • Once infused to your liking, strain and store in a clean bottle or jar.

Hosting & Serving Tips

  • Serve at golden hour with salty snacks! The richness of the plum plays perfectly with olives or marcona almonds.
  • Batch tip: You can pre-shake without the egg white and store in the fridge. Add egg white + shake fresh to serve.
  • Not into egg whites? Try aquafaba for a vegan alternative.

When to Serve This

  • Cocktail hour with friends
  • Dinner parties with seasonal produce
  • When you want to look fancy but didn’t spend hours
  • Date night (this one sets the mood)
Xoxo, cheers!
