The Plum Negroni Sour combines everything we love about a traditional Negroni (bittersweet, bold, and a little mysterious) with a tangy plum syrup and silky egg white for the kind of cocktail that gets remembered.

We’re leaning into rich end-of-summer flavors with a homemade plum syrup and a plum-infused gin that is easier to make than it sounds. If you’re already a Negroni lover (or Negroni-curious), this twist is your next must-shake.

Plum Negroni Sour
Ingredients
- 1 oz plum-infused gin see below
- 1 oz Campari
- 1 oz sweet vermouth
- ½ oz plum syrup see below
- ¾ oz fresh lemon juice
- 1 egg white
- Garnish: dehydrated citrus edible flower, or plum slice
Instructions
- Add all ingredients to a cocktail shaker and dry shake (no ice) to emulsify the egg white.
- Add ice and shake again until well chilled.
- Double strain into a coupe glass.
- Garnish and serve!
Plum Syrup (Lazy Girl Hack-Approved):
- Start with brown sugar simple syrup (equal parts brown sugar and water, simmered until dissolved).
- Add chopped fresh plums to the syrup and cook on low heat until it thickens slightly and the fruit breaks down.
- Remove from heat, stir in ¼ cup water, strain, and chill.
Plum-Infused Gin:
- To a jar, add 1 cup chopped plums and 1.5 cups gin (just enough to cover).
- Seal and store in a cool, dark place for 5–7 days.
- Shake the jar gently each day.
- Once infused to your liking, strain and store in a clean bottle or jar.

- Batch tip: You can pre-shake without the egg white and store in the fridge. Add egg white + shake fresh to serve.
