The Passion Fruit Martini, also known as a Pornstar Martini (hate that name), is your dream tropical vacation manifested in a chilled coupe. It’s fruity, limey, zingy, zippy perfection with an mmMmm of vanilla undertones. It’s perfect for parties, weekend brunch, or a mid-week treat.

We’re going to make all the bits together, including the vanilla syrup (so easy!) I even have a surprise frozen version for you at the end. Cheers!

How to Make a Passion Fruit Martini

  1. Add vanilla vodka, passion fruit liqueur (like Chinola or Passoa), pineapple juice, lime juice, and vanilla syrup into a cocktail shaker.
  2. Add ice, the bigger the better, and shake vigorously.
  3. Strain into a chilled coupe glass.
  4. Simply garnish by floating half of a passion fruit on top.
  5. Serve with a shot of Champagne or Prosecco and sip between nibbles of passion fruit (I don’t make the rules, I just carry them out).

How to Make Vanilla Syrup

Add equal parts water and sugar to a small saucepan, bring to a simmer, and stir until the sugar dissolves. Split open a vanilla bean and scrape out the little vanilla seeds with the back of a knife. Add the seeds and scraped bean to the syrup, turn off the heat, and cover. If you don’t have vanilla beans, you could just stir in vanilla bean paste or extract (1 tablespoon per cup of water). Let the syrup cool to room temperature before adding to your passion fruit martini and bottling the rest for all your future cocktails and coffee drinks. It will keep in the fridge for up to several months.

Ingredients
  • 1.5 oz. vanilla vodka
  • 1 oz. passion fruit liqueur, like Chinola or Passoa
  • 1 oz. pineapple juice
  • 1/2 oz. lime juice
  • 1/2 oz. vanilla syrup
  • To serve: shot of Champagne or Prosecco
  • Garnish: half a passion fruit
