I may have just made the best cocktail for Thanksgiving. This Apple Pie Sour owes its magic to the homemade apple pie syrup that I’m also going to teach you how to make. Trust me, it’s so worth the effort and you can use it in more than just cocktails — think morning coffee and overnight oats.

It’s the perfect Thanksgiving drink for enjoying with pie at the end of the feast, but you could also serve it with appetizers, like this one. If you’re making cocktails for a crowd, I’ve also scaled the recipe for batching and included tips of batching egg white cocktails like this Apple Pie Sour.

Making Apple Pie Syrup

The most important part of this Apple Pie Sour recipe is the homemade Apple Pie Syrup. It’s sooo good! You can use it later in this cocktail, your morning coffee, literally anything! Do yourself a favor and make a big batch. You’ll need:

  • 1/2 Cup Apple Cider
  • 1/2 Cup Filtered Water
  • 1 Cup Brown Sugar
  • 2 Apples, chopped
  • 1 tbsp Pumpkin Pie Spice
  • 1 tbsp Ground Cinnamon
  • 1/2 lemon, freshly squeezed
  • Splash of vanilla bean paste, or extract
  • Pinch of sea salt

Instructions

  1. To a small sauce pot over medium heat, add in the apple cider, water, sugar, chopped apples, spices, and lemon juice.
  2. Stir until the sugar dissolves.
  3. Once the sugar is dissolved, simmer for 10-15 minutes or until the apples are cooked down and soft.
  4. Let cool completely.
  5. Once cooled, add in the vanilla and transfer everything to a blender.
  6. Blend together and strain through a fine mesh sieve.
  7. If the syrup is too thick to strain, add in a little apple cider to thin it out.
  8. Use some in your Apple Pie Sour and store the rest in the fridge for up to 2 weeks (if it even lasts that long!)

Ingredients
  • 4 oz. Vanilla Vodka
  • 2 oz. Apple Cider
  • 1.5 oz. Lemon Juice
  • 1 oz. Apple Pie Syrup (see above)
  • 1 Egg White
  • Ice, for shaking
  • Garnish: apple slice, ground cinnamon, and cinnamon stick
Instructions
  • To a cocktail shaker add vodka, cider, lemon juice, syrup and egg white.
  • Dry shake (with no ice).
  • Add ice and shake again.
  • Double strain between two chilled Nick and Nora glasses
  • Garnish and enjoy!

Batched Apple Pie Sour

Serves 8

Since the above recipe is for 2 people, multiply all of the above ingredients by 4, except the egg white, to make a batch for 8 people.

Stir everything except the egg white in a pitcher and keep cold in the fridge.

Separately, foam your egg whites: In a blender, add 2 egg whites + 1 cup of your pitcher cocktail. Blend 10–15 seconds until foamy and then pour that back into the pitcher and gently fold/stir it all together. Now your pitcher is “pre-foamed!” Keep cold until ready to serve.
