How to Make Stoli Doli
- First, start with a fresh, ripe pineapple. Cut the skin off and then cut it into chunk.
- Add the pineapple chunks to a large airtight container or pitcher.
- Pour vodka over the pineapple until fully covered.
- Seal and refrigerate for up to 7 days.
- Strain out the pineapple, or just keep it going until it tastes how you want it. (See infusing tips below).
- Transfer the infused vodka to bottles or jars and store in the freezer.
- To serve: Pour 2.5–3 oz into a shaker with ice and shake until ice cold. Strain into a chilled martini glass.
What is a Stoli Doli?
“Stoli Doli” is simply pineapple-infused vodka traditionally made with Stolichnaya vodka and fresh pineapple. (It’s short for Stolichnaya and Dole). Over time, the pineapple naturally infuses the vodka with sweetness, acidity, and tropical flavor while softening the sharpness of the spirit itself. Originally made famous by the iconic New York cocktail bar The Capital Grille and later popularized by bars all over the country, this tropical vodka infusion became a cult favorite. How to Infuse Vodka With Pineapple
Knowing how long to infuse the vodka is where people get confused. Technically, you can drink it after only a few hours, but the magic really happens with time. Here’s a cheat sheet for infusing your vodka with pineapple.
- 4–6 Hours: Light pineapple flavor. Fresh and bright, but still very vodka-forward.
- 24 Hours: This is the sweet spot for most people. The vodka starts tasting smoother, juicier, and more tropical.
- 3–5 Days: Maximum pineapple flavor. Rich, golden, slightly sweeter, and dangerously easy to drink.
- Beyond 5–7 Days: Still delicious, but the pineapple can start breaking down too much and create slightly fermented or overly ripe flavors.
Once strained, you can store the infused vodka in the refrigerator for 2–3 weeks. Or, keep in the freezer almost indefinitely thanks to the alcohol content!
Pro tip: Freezer Door Stoli Doli is elite. It gets icy cold but won’t fully freeze.
Tips for Making the Best Stoli Doli
- Buy a good pineapple. You can tell a pineapple is ripe if the top inner leaves pull out easily.

- Following the infusion guidelines above, taste the vodka every day until it reaches the level you like.

Fun Facts About Stoli Doli
Pineapple Actually Softens Vodka: Pineapple contains natural sugars and acids that help mellow harsh alcohol notes, which is why infused vodka tastes smoother than regular vodka.
The Pineapple Gets Boozy Too: Do not throw away the pineapple after infusing. It basically turns into vodka-soaked tropical fruit and is wildly good blended into frozen cocktails, spooned over ice cream, or eaten straight from the container.
Stoli Doli Helped Launch the Infusion Craze: Back in the early 2000s, Stoli Doli became one of the cocktails people specifically traveled for. It helped kick off the modern fruit infusion trend at cocktail bars.
The Color Changes Naturally: As it infuses, the vodka turns from crystal clear to a soft golden-yellow color completely naturally from the pineapple juice.
Stoli Doli Variations
- Classic and straight up.
- Spicy Coconut Stoli Doli: Add 2 oz coconut water + 2-3 jalapeño slices to the shaker and serve over ice.
- Island Vibes Stoli Doli: Add 1.5 oz coconut rum + 1 oz cream of coconut to the shaker and serve over ice.
- Creamy Stoli Doli: Just add a splash of cream
- Minti Stoli Doli: Add fresh mint + agave to the shaker, strain, and serve without ice. Garnish with a mint sprig.
- Fruity Stoli Doli: For even more fresh pineapple flavor, muddle the pineapple in the shaker and add coconut milk or cream + agave to the shaker with your infused vodka. Strain and serve without ice.
