Add pineapple chunks to a large airtight container or pitcher.
Pour vodka over the pineapple until fully covered.
Seal and refrigerate for up to 7 days.
Strain out the pineapple, or just keep it going until you like the flavor.
Transfer the infused vodka to bottles or jars and store in the freezer.
To Serve: Pour 2.5–3 oz into a shaker with ice and shake until ice cold. Strain into a chilled martini glass.
