Guinness Iced Irish Coffee

My Guinness Iced Irish Coffee is an obvious choice for St Patrick’s Day (or the morning after). But it hits just about any time of year, too, whether you’re wearing green or not.
Classic Irish coffees are made with just four ingredients: hot coffee, Irish whiskey, sugar and whipped cream. I’m going for a refreshing iced version with cold brew coffee instead. I use traditional Irish whiskey, but I also add coffee liqueur to really lean into the pick-me-up vibes. And, of course, there’s the perfect addition of Guinness, as if it wasn’t already Irish enough.
Watch Me Mix It
Sometimes, I find that traditional Irish coffees can be on the sweeter side, so I only add brown sugar simple syrup for the sweet element, which melds so nicely with the rich, malty, bitter flavors of the other ingredients. You can add as little or as much syrup as you want to suit your own sweet tooth. The recipe is already so simple to make and can be altered to your liking in many ways: add Irish cream, skip the whiskey, up the Guinness — it’s up to you!

Guinness Iced Irish Coffee
Ingredients
- 1.5 oz Irish Whiskey
- 3/4 oz Coffee Liqueur
- 1/2 oz Brown sugar simple syrup
- 2 oz Cold Brew
- 3-4 oz Guinness Stout
- Lightly whipped heavy cream
- Ice
- Fresh mint (for garnish)
Instructions
- In a cocktail shaker add Irish whiskey, coffee liqueur, simple syrup, and cold brew.
- Add ice and shake.
- Strain into a highball glass filled with ice.
- Top with Guinness leaving room for heavy cream.
- Top the remaining space in the glass with lightly whipped heavy cream.
- Garnish & enjoy!
