Celebrate St. Patrick’s Day with what I’m calling a Pot o’ Gold. We’re taking the classic Gold Rush cocktail, but using Irish whiskey and gold edible glitter to make this the easiest and tastiest St. Patrick’s Day cocktail ever!

How to Make a Gold Rush
- Add Irish whiskey, lemon juice, honey syrup, and gold edible glitter into a cocktail shaker.
- Add ice and shake.
- Double strain over a fresh cube of ice.
- Garnish and enjoy some good craic!
Make Your Own Honey Syrup
Making your own honey syrup at home is sooo easy! All you do is simmer equal parts honey and water in a small saucepan over medium-low heat until it’s a syrupy consistency and the honey is completely dissolved, about 5 minutes. Let it cool completely, add to your Gold Rush cocktail, and store for up to 2-4 weeks.

Print Recipe Ingredients
- 2 oz. Irish whiskey
- 1 oz. fresh lemon juice
- 1/2-3/4 oz. honey syrup
- 1-2 tsp. gold edible glitter
- Ice
- Fresh mint, for garnish
Instructions
- Add all ingredients to a cocktail shaker.
- Add ice and shake. Dould strain over a fresh cube of ice.
- Garnish and enjoy some good craic!
