These might just be the cutest little cocktails I’ve ever made. I wanted to celebrate St. Patrick’s Day with some jello shots (obviously), so I used Irish whiskey as the spirit base (obviously). But I just felt like St. Patrick’s Day was too fun of a day to serve boring jello shots in a shot glass… so I carved out some lemon halves and made the jello shots in these lemon cups… obviously?! How to Make Sour Lemon Jello Shots
Listen, this isn’t your average weeknight cocktail. Irish Whiskey Sour Lemon Jello Shots are definitely made for parties like St. Patrick’s Day, summer birthdays, and bachelorette parties. The jello shot mixture usually makes 12–16 lemon wedges depending on lemon size. Scale the recipe up and use more lemons if you’re having a bigger party!
1) Prepare Lemon Cups
Cut lemons in half. With a spoon, hollow out the flesh of the lemon peel, making sure not to pierce it. Set aside.
2) Bloom the Gelatin
Sprinkle 2 tbsp gelatin over ½ cup cold water. Let sit 3–5 minutes until spongy.
3) Dissolve
Add 2 cups boiling water and whisk until the gelatin is fully dissolved.
4) Cool Slightly
Let the mixture sit 2–3 minutes so the alcohol doesn’t cook off.
5) Add Remaining Ingredients
Stir in 1 cup Irish whiskey + 1/2 cup lemon juice + 1/2 cup simple syrup
6) Fill Lemon Halves
Place hollowed lemon halves in a muffin tin so they sit flat. Pour mixture into each.
7) Chill
Refrigerate 3–4 hours until firm.
8) Slice
Cut each lemon half into 3 to 4 wedges for easy eating.

How to Make Simple Syrup
Making your own simple syrup at home is really easy and if you’re into making your own cocktails and coffee drinks at home, I highly recommend whipping up a batch real quick and storing it for all your future drink mixing! For the easiest simple syrup, combine equal parts water and granulated sugar in a medium saucepan over medium heat, stirring until the sugar is fully dissolved. Let the syrup cool completely before storing in a jar, bottle, or other airtight container. It should last in the refrigerator for about a month.
If you’re feeling creative, make a flavored simple syrup with herbs like basil, mint, or rosemary and garnish the jello shots with which fresh herb you chose.
Tips for Perfect Lemon Jello Shots
Before pouring, let the liquid cool for 5 minutes so it doesn’t soften the lemon peel and cause leaks.
