Looking to shake up something a little vintage, a little romantic, and a lot delicious? Enter the Clover Club — a pre-Prohibition classic with tart raspberry, silky foam, and botanical gin. This version is scaled for two, perfect for a cozy date night or a chic cocktail hour with your favorite person. It’s giving Old Hollywood elegance with a splash of pink.

The Clover Club is a cocktail with history and heart. Dating back to the early 1900s, it’s traditionally made with gin, lemon, raspberry syrup, and egg white — shaken until frothy and smooth. The balance is beautiful: bright citrus, sweet-tart berries, and creamy texture, all lifted by the herbal notes of London Dry gin. It’s nostalgic without being outdated, and it’s guaranteed to impress.

Clover Clubs
Ingredients
- 1 egg white
- 1.5 oz lemon juice
- 1 oz raspberry syrup
- 4 oz London Dry gin
Instructions
- First, do a dry shake (no ice) to whip the egg white into a foam.
- Then, add ice and shake again until chilled.
- Double strain into two chilled coupe glasses.
- Garnish with a fresh raspberry, lemon twist, or simply serve it smooth and unadorned.
Ingredient Notes
- Egg white – This gives the drink its creamy texture and signature foam top. If you’re avoiding eggs, you can use ¾ oz aquafaba (chickpea brine) as a plant-based alternative.
- Raspberry syrup – Homemade or high-quality store-bought syrup adds vivid color and sweet-tart flavor. You can make your own by simmering raspberries with sugar and water, then straining.
- Gin – A London Dry gin works best here — the juniper-forward profile complements the lemon and balances the syrup.
- Lemon juice – Always fresh. Its acidity cuts through the sweetness and ties everything together.
Tips & Variations
- For a Valentine’s Day touch, garnish with heart-shaped raspberry picks or rose petals.
- Try a flavored gin (like citrus or berry) for an extra twist.
- Want a lower ABV version? Reduce the gin slightly and top with sparkling water for a spritz-like feel.
- Make it a mocktail by using a non-alcoholic gin and aquafaba.
