A romantic riff on the classic Clover Club, this silky raspberry gin cocktail is perfectly balanced with citrus and foam — and made just for two.

Ingredients
  • 1 egg white
  • 1.5 oz lemon juice
  • 1 oz raspberry syrup
  • 4 oz London Dry gin
Instructions
  • First, do a dry shake (no ice) to whip the egg white into a foam.
  • Then, add ice and shake again until chilled.
  • Double strain into two chilled coupe glasses.
  • Garnish with a fresh raspberry, lemon twist, or simply serve it smooth and unadorned.
