Sparkling Pear Margarita

New Year’s Eve is the biggest day for bubbly around the world. While most people are poppin’ bottles and drinking Champagne, Prosecco or other sparkling wine from bottles and flutes, I’ll be mixing margaritas! That’s right, I’m taking the classic margarita and saying “out with the orange, and in with the pear!” I’m topping it with my favorite bubbly and dancing the night away into a brand new year. Who’s with me!?

Mix it With Me
- Rim two rocks glasses with sea salt or a salt-sugar blend, then chill.
- Add tequila, pear liqueur, pear juice, syrup, and fresh lime juice to a shaker.
- Fill the shaker with ice and shake until very cold.
- Strain evenly into the two rimmed and chilled glasses.
- Top each with Champagne or Prosecco.
- Garnish and serve immediately.
A Twist on the Classic Margarita
The Classic Margarita is a 3-ingredient cocktail traditionally made with tequila, lime juice, and orange liqueur (Cointreau or Triple Sec). It strikes a bright and tangy balance between sweet, sour, and spirit-forward. Served shaken over ice with a salted rim, it’s one of the most popular cocktails in the world.
This Sparkling Pear Margarita is a twist on the classic that’s fit for celebrations like New Year’s, birthday, anniversaries! The main difference is in the flavor profile. I swap out the orange liqueur for pear liqueur and add pear juice to amp up the fruit’s more subtle flavors. I top with bubbles, which is not traditionally a part of the classic margarita recipe. It sure does make it feel special, though.

Sparkling Pear Margarita
Ingredients
- 3 oz. tequila blanco
- 1.5 oz. pear liqueur (St. George Spiced Pear is perfect here)
- 2 oz. pear juice (or spiced pear juice), chilled
- 1.5 oz. fresh lime juice
- 1 oz sage syrup
- 4-6 oz. Champagne or dry Prosecco, chilled
- Optional: sea salt rim or salt-sugar rim
- Garnish: this pear slice or lime wheel
Instructions
- Rim two rock glasses, then chill.
- Add tequila, pear liqueur, pear juice, syrup, and lime juice to a shaker.
- Add ice to the shaker and shake until very cold.
- Strain evenly into the two rimmed and chilled glasses.
- Top each with Champagne or Prosecco.
- Garnish and serve immediately.
How to: Sage Syrup
Ingredients
- 1 cup water
- 1 cup sugar
- 8–12 fresh sage leaves, gently bruised
Instructions
- Add water, sugar, and sage leaves to a small saucepan. Heat over medium, stirring until the sugar dissolves.
- Bring just to a gentle simmer (don’t boil hard).
- Simmer 5–10 minutes, then remove from heat.
- Let steep 15–30 minutes, depending on how bold you want it.
Strain, cool, and store in a sealed jar or bottle.
