This one’s for you. The citrus really helps cut the bitterness you find in a classic Negroni by balancing it with sourness. The rosemary simple syrup plays a similar role by adding sweetness (but not too much sweetness!) This twist on a classic is the perfect gateway Negroni to help ease you into those bitter flavors you might eventually learn to love.

Make it With Me

  1. Smoke your chosen glass by lighting the tip of a fresh sprig of rosemary until it begins to smoke.
  2. Flip the glass upside down over the smoking rosemary and let it sit while you mix everything up.
  3. In a cocktail shaker add gin, sweet vermouth, Campari, rosemary syrup, lemon juice, a splash of orange juice, and an egg white.
  4. Dry shake, which just means shake it without ice. Then, add ice and shake again.
  5. Double strain your Negroni sour into the smoked glass.
  6. Garnish with a fresh rosemary sprig and citrus wheel.

Make Your Own Rosemary Syrup

Making your own rosemary syrup at home is actually really easy and produces a fresher, more natural-tasting syrup. The base recipe uses 1 water and 1 part sugar, plus a sprig of rosemary. Heat everything in a small saucepan on the stovetop, whisk the sugar until it dissolves, and reduce to a simmer. After about a minute, take it off the heat and let it cool. Strain it into a storage container and refrigerate. It should keep for up to 4 weeks.

Ingredients
  • 1 oz. Gin (Bertha's Revenge is my favorite!)
  • 1 oz. Sweet Vermouth
  • 1 oz. Campari
  • 1/2 oz. Rosemary Syrup
  • 1/2 oz. Lemon Juice
  • Splash of Orange Juice
  • 1 Egg White
Instructions
Smoked Glass
  • Using a lighter, light the tips of a fresh rosemary sprig until it begins to smoke.
  • Flip your coupe upside down over the smoking sprig and let sit while you mix your cocktail.
Negroni Sour
  • In a cocktail shaker add gin, sweet vermouth, Campari, syrup, lemon juice, a splash of orange juice, and egg white.
  • Dry shake.
  • Add ice and shake again.
  • Double strain into the smoked glass.
  • Garnish with a fresh rosemary sprig and a citrus wheel.
