If you love bold, refreshing drinks with a little kick, the Lemon Ginger Mocktail Spritz will quickly become your go-to. This recipe combines spicy ginger juice, fresh lemon, and a touch of honey for sweetness, all topped with sparkling water for a bubbly finish. It’s a non-alcoholic drink that’s simple, elegant, and full of flavor. Whether you’re keeping things alcohol-free or are just in the mood for something light and zesty, this spritz is the perfect choice.

  1. First, make your own ginger juice by chopping up some ginger, blending it with water, and straining into another glass.
  2. Add 3/4 ounces of your homemade ginger juice to your serving glass along with 1/2 ounce honey syrup (which you can also make yourself) and 1 ounce lemon juice.
  3. Add ice, top with sparkling water and give it a stir.
  4. Add a slice of lemon and a sprig of rosemary if you want a garnish. Who doesn’t love a garnish?

What Makes a Spritz a Spritz

Well, first, let’s talk about how cute it is that “spritz” means “a splash” in German. But despite it’s name origins, the spritz is an Italian cocktail through and through. It is usually served before dinner with appetizers and is made with a base recipe of 3 parts sparkling wine + 2 parts bitter liqueur + a splash of soda water, usually with a zesty garnish. But we’re making ours a mocktail.

To make any spritz into a mocktail, simply swap the sparkling wine for sparkling water. Depending on the flavors you’re going for, you can even use your favorite flavored sparkling water. Then, replace the bitter liqueur with juices and syrups. Spritzes are usually citrusy, but you’re the mixologist—make it however you want!

Sparkling Water

The key to making a mocktail spritz feel like a spritz is fizz. You won’t even miss the sparkling wine when you swap it for your favorite sparkling water. I used unflavored San Pellegrino for my lemon ginger mocktail spritz, but you could also used a flavored kind (I’d recommend lemon).

Ginger Juice

It might sound like a whole thing, but making your own ginger juice is actually super easy! All you need is fresh ginger root, water, and a blender or juicer. You can peel the ginger with a spoon if you want, but it’s not necessary because we’ll be straining it anyway. Once you cut the ginger into smaller chunks, add them to your blender along with 1/4 cup of water. Blend for about a minute until the ginger is broken down, almost like a paste. Pour the ginger juice through a fine mesh sieve strainer into another container. Press down on the ginger pulp in the strainer with a silicone spatula to squeeze out every last drop. And there you go—you just made your own ginger juice. You’ll use 3/4 ounces for your Lemon Ginger Mocktail Spritz.

Honey Syrup

Honey adds a nice sweetness that cuts the bitter zing from the ginger and lemon. You can buy honey syrup or make your own. For homemade honey syrup, simply stir equal parts honey and hot water until the honey is completely dissolved and let it cool completely before using.

Lemon Juice

The bright acidity from the lemon juice is a classic combination with ginger and really makes this mocktail feel like a true spritz for me. I recommend using fresh-squeezed lemon juice.
