Halloween Aperol Spritz

Everyone loves an Aperol Spritz. But my party trick for making these spooky and special for Halloween is all in the presentation. Pour the Prosecco and sparkling water, but let the guests add their own Aperol … from a syringe! It’s super creepy, but that’s what makes it the perfect Halloween cocktail. You can also give the glasses a bloody rim and/or mix the Aperol with a blood orange syrup. The more gore, the better.

How to Make It
- First, fill your syringes with Aperol and set aside. You can store these in the fridge to keep them cold!
- If you want to add a bloody rim, you can use a homemade blood orange syrup. Simply pour a small pool of syrup on a plate and twist the rim of the glass in the syrup. When you flip the glass right-side-up, let the syrup drip down the sides like blood.
- Then, fill your rimmed glasses with ice.
- Pour in 3 oz of Prosecco first, and top with 1 oz of sparkling or soda water.
- Put the syringe directly into the wine glass, but don’t add it yet. You can let you guests push in their own shot of Aperol.
- Garnish with a fresh orange slice and serve immediately.

How to Make Blood Orange Syrup
- Juice enough blood oranges to get about 1 cup of juice (about 6-8 oranges).
- Combine the juice with 1 cup of granulated sugar in a medium saucepan over medium heat.
- Gently heat until all of the sugar has dissolved and the juice is clear, stirring occasionally.
- If you want to add blood orange syrup to the Aprol syringes, bring to a boil for 1 minute and remove from the heat.
- If you want to use the syrup for the rim, it will need to thicken. Continue heating on the stove, stirring occasionally, until it has reduced by about half to a thick syrup.
- If you want to both add the syrup to the syringe and use it for your bloody rim, reserve most of the syrup after boiling for 1 minute and reduce the rest down for the rims.
- Cool completely, then strain your syrup through a fine mesh sieve into an airtight glass jar or bottle. It will keep in the fridge for up to 4 weeks.
