Coffee Simple Syrups

I LOVE my espresso machine. It was one of those splurge items I couldn’t wait to get myself because that’s just how much I love coffee. I usually make a simple latte with two shots of espresso and steamed whole or oat milk, but I sometimes like to add a little homemade flavored simple syrup. It feels like I have a Starbucks in my house! If you don’t have an espresso machine, you should totally still make these syrups for your morning french press, moka pot, drip, aeropress… or whatever way you like your morning coffee.

These simple syrup variations are some of the most versatile and easy homemade simple syrup recipes to master. And it’s good for way more than just coffee drinks. Add to dessert cocktails or over yogurt, into overnight oats, and definitely on a scoop of ice cream. Having a bottle of this on hand is always a great idea.
Once you have the base simple syrup recipe, you can add all kinds of herbs and spices to go with your cocktails, coffee, and tea. These are a few more elaborate simple syrup recipes, for those days you really want a PSL, but don’t want to leave the house, if you know what I mean.
Carrot Cake Simple Syrup
A Carrot Cake Latte is the official spring version of a PSL. Saying it out loud makes it true.

Ingredients
- 1 cup carrot juice
- 1 cup brown sugar
- 2 tbsp chopped walnuts
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/2 tsp vanilla extract
- Pinch of nutmeg
- Pinch of salt
Instructions
- In a small saucepan combine carrot juice, brown sugar, walnuts, cinnamon, ginger, nutmeg, and salt.
- Heat gently and stir until the sugar dissolves.
- Bring to a soft simmer and cook for 5–6 minutes to infuse the walnut and spices.
- Remove from heat and stir in vanilla extract.
- Let cool slightly, then fine strain out the walnuts.
- Bottle and refrigerate. Keeps about 2–3 weeks.
Optional Upgrades
For a coffee simple syrup with very EXTRA carrot cake energy.
- Add 1 tbsp golden raisins while simmering.
- Add a small strip of orange peel to brighten the carrot flavor.
- Finish with 2–3 drops orange blossom water for a bakery-style aroma.

Cinnamon Roll Simple Syrup
This is your reminder that life is short and your morning coffee is whatever you make it.

Cinnamon Roll Syrup
Ingredients
- 1 cup water
- 1 cup brown sugar
- 1 tbsp ground cinnamon, or 2-3 cinnamon sticks
- Pinch of salt
- 1/2 tsp vanilla extract
- Splash of almond extract, a little goes a long way! (key for that icing flavor)
- Optional: tiny pinch nutmeg
Instructions
- In a small saucepan, combine water, brown sugar, cinnamon, and salt.
- Heat gently, stirring until the sugar dissolves.
- Bring to a light simmer and cook 4–5 minutes to infuse the cinnamon.
- Remove from heat and stir in vanilla extract and almond extract.
- Let cool slightly, then strain if using a cinnamon stick.
- Bottle and refrigerate. It will keep in the fridge for 2-3 weeks.
Cinnamon Syrup Pro Tip
If you want it to taste even more like a fresh cinnamon roll, add ½ tsp melted butter right at the end before bottling. It adds that warm pastry note.
