Vanilla simple syrup is one of the most versatile and easy homemade simple syrup recipes to master. And it’s good for way more than just cocktails. Drizzle it into lattes, coffee, tea, or over yogurt, into overnight oats, and definitely on a scoop of ice cream. Having a bottle of this on hand is a great way to have a great day.
Once you have the base simple syrup recipe, you can add all kinds of herbs and spices to go with your cocktails, coffee, and tea. For Vanilla Simple Syrup, there are two methods depending on what ingredients you have, how much time you have, and how fancy you want to be.
Vanilla Simple Syrup 2 Ways
1) With Vanilla Extract
Place 1 cup water + 1 cup sugar in a saucepan on medium heat until the sugar dissolves, stirring occasionally. Remove from heat, stir in 1 tsp vanilla extract and let cool.

2) With Vanilla Beans
Using a knife, slit the vanilla bean down the middle of the pod and scrape the seeds into the saucepan. Add sugar, vanilla bean pod, and water into the saucepan over medium heat until the sugar dissolves, stirring occasionally. Remove from heat, let cool completely, and strain.
Use in a Guinness Espresso Martini!
