Margarita Popsicles

Adults deserve popsicles, too. The Margarita Popsicles take the classic margarita recipe, add pineapple juice, and freeze it into boozy popsicles you can enjoy any time you need a cold, refreshing treat. I love keeping a tray of these in the freezer throughout the summer for those days when you need to just put your feet up and chill out. They are perfect for casual gatherings and pool parties when the summer heat is doing the absolute most.
Make Popsicles With Me
- Mix together the tequila, Cointreau, fresh lime juice, fresh pineapple juice, water, and flaky sea salt until smooth and fully combined.
- Fill each 3 oz Dixie cup, leaving about ¼ inch of space at the top.
- Cut a small slit halfway through the center of each lime wheel and slide it onto a popsicle stick. Place the stick into the center of each cup so the lime wheel sits just on the surface of the mixture.
- Freeze overnight, or until completely solid.
- To serve, briefly run the outside of the Dixie cup under warm water for a few seconds, then gently peel away the paper cup.
- Sprinkle with flaky sea salt or Tajín before serving, if desired.

Tequila
Tequila is one of my favorite spirits ever, and the obvious choice for a margarita. Check out my Tequila Guide for everything you need to know, including which bottles I recommend.
Cointreau
The classic margarita always includes an orange liqueur of some kind. Triple sec is a type of orange liqueur and Cointreau is by far the most popular brand. I always have my bar cart stocked.
Pineapple Juice
Fresh pineapple juice will give you the brightest, most vibrant flavor, but a good-quality 100% pineapple juice from the grocery store works great too. If you’re making your own, simply cut a ripe pineapple into chunks, blend until smooth, then strain through a fine-mesh sieve or cheesecloth for a smoother juice. Store any extra in an airtight container in the refrigerator for up to 3 days.

Tips for Making the Best Margarita Popsicles
- Don’t shortcut the freeze time. Waiting for these margarita popsicles to completely freeze is the hardest part about making them, but you’ll be glad you waited.
- Once frozen, run the cups under warm water briefly to melt the outside layer of the popsicle so it separates from the cup easily.
- If you’re using fresh pineapple juice, give it a good stir before measuring since the pulp naturally settles to the bottom. If you blended your own juice, strain it through a fine-mesh sieve if you prefer a smoother popsicle, or leave a little pulp in for extra fresh pineapple flavor.
- Adding the water to your margarita mixture does two things: it helps the popsicles actually freeze since alcohol doesn’t on its own, and it helps dilute the margarita just like a cold glass filled with ice normally would is served like a regular margarita on the rocks.
- If you want more than 9-10 popsicles, you can easily scale up the recipes accordingly. Double all the ingredients for 18-20 popsicles.
When to Serve It
- 4th of July: I love a 4th of July party that’s just about lounging in a pool or at the beach all day. These popsicles are perfect for that kind of party.
- All Big Gatherings: Think backyard BBQs, large family gatherings, watching the World Cup (or any other sport) with a bunch of friends, bachelorette parties, baby showers, etc. You can make as much as you need and people will love them!
- Pool Parties: Duh! If you have a pool or know someone who does, a big tray of these will make everyone happy and feeling like a kid again.

- 1/2 cup Agave syrup
- optional pinch of seal salt
- Garnish: 9-10 very thin lime wheels and Tajin or flaky sea salt for the rim
