If you’re looking for a light, floral, citrusy pitcher cocktail to keep in your hosting rotation, meet your new go-to: the White Linen Pitcher. It’s crisp, garden-fresh, and perfect for easy weekend pours. We’re talking cool cucumber juice, bright lemon, a kiss of elderflower liqueur, and the botanical backbone of gin.

It’s refreshing without being overly sweet, effortlessly elegant, and designed to make your next brunch, patio party, or porch hangout feel just a little more elevated.

The combo of cucumber + lemon + elderflower is pure spring-summer magic. Cucumber keeps things crisp and cooling, the lemon brightens it all up, and elderflower adds soft floral notes that play beautifully with gin. A touch of honey or simple syrup smooths it out, and sparkling soda water gives it that perfect effervescent finish.

You can serve this in a big ice-filled pitcher, or keep the base chilled and build each glass to order; either way, it’s a crowd-pleaser.

Servings 8 Drinks
Ingredients
  • ½ cup fresh cucumber juice*
  • ¾ cup fresh lemon juice
  • ½ cup honey syrup or simple syrup
  • ½ cup elderflower liqueur like St-Germain
  • cups gin
  • cups soda water added just before serving or to each glass
  • Ice
  • Optional garnishes: cucumber ribbons mint sprigs, lemon wheels
Instructions
  • Make cucumber juice: Blend 1 large cucumber, then strain through a fine mesh sieve or cheesecloth to yield about ½ cup juice.
  • In a large pitcher, stir together the cucumber juice, lemon juice, syrup, elderflower liqueur, and gin.
  • Chill the pitcher until ready to serve.
  • Just before serving, add ice and soda water to the pitcher — or pour the base into individual glasses with ice and top each with ⅓ to ½ cup soda water.
  • Garnish with cucumber ribbons, lemon slices, or mint.

Ingredient Notes

  • Cucumber juice – Refreshing and light; adds a spa-water vibe to the whole pitcher.
  • Lemon juice – Balances the sweetness with just enough tang.
  • Elderflower liqueur – Floral and delicate, a perfect match for gin.
  • Honey syrup – For a softer sweetness; you can sub simple syrup if preferred.
  • Soda water – Adds that fizzy spritz finish. Wait to add until serving to preserve bubbles.

Tips & Variations

  • Make it a mocktail – Skip the gin and elderflower liqueur and sub with tonic water or cucumber sparkling water.
  • Add fruit – Sliced strawberries or melon balls make for a fun twist.
  • Use a flavored gin – Cucumber, citrus, or floral gins layer beautifully in this pitcher.
  • Prep ahead – Mix the base up to 24 hours ahead and chill. Add ice and soda water just before serving.
