There’s nothing quite like a Lavender London Fog to make tea time feel special. This recipe takes the beloved Earl Grey latte to the next level with a homemade lavender and vanilla bean honey syrup and a touch of smoky flair. The subtle floral notes blend perfectly with the robust tea and creamy, frothy milk, creating a drink that’s equal parts indulgent and soothing. Whether you’re cozying up on a chilly day or treating yourself to something extra, this latte is pure comfort in a cup.
As I ease into 2025 and in the middle of dry January, I’m looking for my sip fix in any way that I can. I knew I wanted to do something with Lavender this week. Our new house has this lavender bush that is popping off, so I needed to put it to good use. Also anyone have any gardening tips for me?
Drum roll please… 🥁
Lavender & Vanilla Bean Simple Syrup
Not to say that this is the star of the show, but it really really is. It add such a nice layer of sweetness for the London Fog that I think it needs. I also opted to use honey as my sugar instead of white granulated because again, I think the rich honey flavors play such a nice role in the drink! So here’s the recipe for the syrup that we’ll use for our London fog. Oh! and I want to note, I made a half amount of this syrup. So, feel free to bump this up to a full cup if you’re going to want to use more of this throughout the week!
Smoked Lavender & Vanilla Bean London Fog
Equipment
- 1 Milk Frother
- 1 Tea Kettle
- Hot Toddy Mugs
Ingredients
- 2 Earl Grey Tea Bags I like it strong
- 1/2 cup hot water
- 3/4 oz lavender and vanilla bean honey syrup
- 2-3 oz Warm-frothed whole milk or milk alternative of choice to top (I don’t want to put an amount because everyone’s milk preference is different!)
- Optional Dried Lavender
- 1/2 cup honey, a Clover honey works nice here!
- 2-3 sprigs fresh lavender
- 1/2 vanilla bean split in two, and split down the middle to expose seeds
- 1/2 cup water
Instructions
- Start by making your syrup, see below.
- Once that’s ready, add water to your kettle and turn it on.
- While your kettle is heating up, smoke your mug on a heat-safe
- board by using a match to light your mound of dried lavender.
- Smoke the glass for about a minute or two before adding your two tea bags.
- Fill with your hot water about 3/4 of the way full.
- Let steep for at least 3-5 minutes before removing the tea bags.
- Add in your honey syrup to the warm tea.
- Top with your warm frothed milk of choice!
- Add all ingredients to a saucepan and place on medium heat.
- Stir until the honey has incorporated with the water to create that syrup-like consistency.
- Let simmer for 5-6 minutes.
- Remove the lavender sprigs from the pot at this point if you want to avoid an overbearing lavender flavor, some are more sensitive than others!
- Let cool & strain.
- Store in the fridge for 2-4 weeks!
