How to Make a Bitter Soda

  1. To a glass, rim with lime juice and spicy salt.
  2. To the rimmed glass, add ice.
  3. Add your choice of fresh citrus juice (I like grapefruit!) and a healthy amount of bitters (5-6 dashes).
  4. Stir together and top with soda water.

Citrus Juice

You can use whatever kind of citrus juice you want for this recipe. I make mine with fresh grapefruit juice because it’s also kind of a bitter-sour flavor. You could use orange juice (blood orange and Cara Cara would be yummy!), pomelo juice, tangerine or clementine juice, or even plain old lemon or lime juice. Just make sure it’s fresh squeezed because with so few ingredients, each one counts extra!

Bitters

If you add one thing to your bar cart, let it be a bottle of bitters. Bitters are super concentrated flavorings made from infused spices and botanicals that just add that little extra something special to a cocktail. Bitters really make a mocktail taste like more than just juice or soda water. There are a ton of fun kinds of bitters out there to try. Angostura bitters are really popular and widely available, with spiced notes of cinnamon and clove. You could also use orange bitters or Peychaud’s which is more sweet and less bitter than Angostura.

Soda Water

Soda water is basically the same thing as club soda, with a little less mineral content. For this bitter citrus soda, add any kind of carbonated soda water you prefer. For unflavored, I love Topo Chico or Fever Tree.

  • Always always always use fresh squeezed citrus juice for you mocktails and cocktails. This mocktail only has 3 ingredients, so each one really counts.
  • The bitters really do make this recipe what it is. Without it, you might as well just drink a seltzer or a glass of juice…
  • Treat your bitter soda mocktail like a cocktail. By this I mean add a cute garnish, stir it gently with ice like a bartender would, drink it when socializing or at the end of a long day. There’s no reason why a mocktail can’t play the same role as an alcoholic cocktail.
