Mount Rigi Spritz

1.5 oz Gin or Vodka
¾ oz @mountrigi
¾ oz Lemon Juice
½ oz Honey Simple Syrup
Top with Topo Chico or Sparkling Wine
Garnish: Lemon Wheels & Fresh Thyme

In a spritz glass add ice, gin, mount rigi, lemon juice and honey syrup.
Stir together and add lemon wheels for garnish.
Top with desired bubbles.
Garnish with fresh thyme.
