Add lemon peels and Everclear (or vodka) to a large jar.
Let the mixture infuse for 30 days in a cool dark place, like the pantry or cupboard.
Strain out the peels.
Make simple syrup (heat sugar and water until dissolved, then cool).
Combine syrup with infused alcohol, to taste.
Let it rest for another week.
Place in the freezer before serving.
