Dirty Martini Dip

Aaaaalmost as good as a dirty martini.

Servings 1.5 cups
Ingredients
  • 1 cup ricotta (whole milk for best texture)
  • 2-3 tbsp blue cheese, crumbled (adjust to taste)
  • 2.5 tbsp olive brine
  • Splash of gin
  • Splash of dry vermouth
  • 2 tbsp fresh chives, finely chopped
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp lemon zest
  • Pinch of salt, optional
  • To serve: olive oil, flaky salt, green olives
Instructions
  • In a bowl or food processor, mix ricotta and blue cheese until mostly smooth but still a little textured.
  • Add olive brine, gin, and vermouth. Stir until creamy.
  • Mix in chives, pepper, garlic powder, onion powder, and lemon zest.
  • Taste and adjust. Add more brine for saltiness or blue cheese for funk.
  • Transfer to a serving bowl, drizzle with olive oil, and finish with flaky salt.
