In a bowl or food processor, mix ricotta and blue cheese until mostly smooth but still a little textured.
Add olive brine, gin, and vermouth. Stir until creamy.
Mix in chives, pepper, garlic powder, onion powder, and lemon zest.
Taste and adjust. Add more brine for saltiness or blue cheese for funk.
Transfer to a serving bowl, drizzle with olive oil, and finish with flaky salt.
