In a heatproof bowl, add 2 packets of unflavored gelatin.
Pour over ½ cup boiling water, whisking until fully dissolved.
Stir in coconut cream until fully combined and smooth.
Let the mixture cool to room temperature (about 5 minutes).
Gently stir in chilled rum.
Pour into coupe glasses and refrigerate for at least 4 hours, or until fully set.
