Ingredients
  • 1/2 cup apple cider
  • 1/2 cup filtered water
  • 1 cup brown sugar
  • 2 apples, chopped
  • 1 tbsp pumpkin pie spice
  • 1 tbsp ground cinnamon
  • 1/2 lemon, freshly squeezed
  • Splash of vanilla bean paste or extract
  • Pinch of sea salt
Instructions
  • To a small sauce pot over medium heat, add in the apple cider, water, sugar, chopped apples, spices, and lemon juice.
  • Stir until the sugar dissolves.
  • Once the sugar is dissolved, simmer for 10-15 minutes or until the apples are cooked down and soft.
  • Let cool completely.
  • Once cooled, add in the vanilla and transfer everything to a blender.
  • Blend together and strain through a fine mesh sieve.
  • If the syrup is too thick to strain, add in a little apple cider to thin it out.
  • Store it in the fridge for up to 2 weeks (if it even lasts that long!)
