To a small sauce pot over medium heat, add in the apple cider, water, sugar, chopped apples, spices, and lemon juice.
Stir until the sugar dissolves.
Once the sugar is dissolved, simmer for 10-15 minutes or until the apples are cooked down and soft.
Let cool completely.
Once cooled, add in the vanilla and transfer everything to a blender.
Blend together and strain through a fine mesh sieve.
If the syrup is too thick to strain, add in a little apple cider to thin it out.
Store it in the fridge for up to 2 weeks (if it even lasts that long!)
