In a heatproof bowl, add 2 packets of gelatin.
Pour over ½ cup boiling water, whisking until fully dissolved.
Stir in orange juice and Aperol.
Let mixture cool to room temp (about 5 minutes).
Gently stir in chilled Prosecco to preserve the bubbles.
Pour into coupe glasses (or molds/orange peels if desired).
Refrigerate for at least 4 hours or until fully set.
