Aperol Spritz Jello Martini
Tastes like: a sparkling aperitivo hour

Ingredients
  • 2 packets unflavored gelatin 0.5 oz total
  • ½ cup boiling water
  • ½ cup orange juice
  • 1 cup Aperol
  • 1 cup chilled Prosecco
Instructions
  • In a heatproof bowl, add 2 packets of gelatin.
  • Pour over ½ cup boiling water, whisking until fully dissolved.
  • Stir in orange juice and Aperol.
  • Let mixture cool to room temp (about 5 minutes).
  • Gently stir in chilled Prosecco to preserve the bubbles.
  • Pour into coupe glasses (or molds/orange peels if desired).
  • Refrigerate for at least 4 hours or until fully set.
